Recipe DescriptionYour basic (yes you guessed) potato curry

InstructionsPeel potatoes and cut into 1 inch pieces. Also cut tomatoes

into 1 inch pieces. Heat oil, add mustard seeds and when they

pop add cumin seeds, dried hot chillies, bay leaves, asafoetida.

Stir for 4-5 seconds and add potatoes, cayenne, turmeric, salt,

fresh chillies, fresh ginger and 5 floz water. Cover and simmer

for 10 mins. Add all coriander, tomatoes, coconut, brown sugar

and 12 floz water. Simmer for 10 mins. Add tamarind paste

and simmer for a further 2-3 minutes.
