| Instructions | Peel potatoes and cut into 1 inch pieces. Also cut tomatoes |
| into 1 inch pieces. Heat oil, add mustard seeds and when they |
| pop add cumin seeds, dried hot chillies, bay leaves, asafoetida. |
| Stir for 4-5 seconds and add potatoes, cayenne, turmeric, salt, |
| fresh chillies, fresh ginger and 5 floz water. Cover and simmer |
| for 10 mins. Add all coriander, tomatoes, coconut, brown sugar |
| and 12 floz water. Simmer for 10 mins. Add tamarind paste |
| and simmer for a further 2-3 minutes. |
